Qualifications:
– Ability to communicate orally and in writing in English is required;
– Completion of secondary (high) school is required;
– 2 years to less than 3 years of work experience as a cook is required.
Job duties:
– Prepare, cook, and present following Japanese dishes: sashimi and other dishes handling fish and sea food such as mackerel, tuna, salmon, Ankimo (monk fish foie gras), butterfish, yellowtail, mackerel, shrimp, octopus, squid, scallop, and clams; cold appetizers and dishes such as Tataki, Tako Wasabi (octopus and wasabi), and carpaccio; deep fried dishes such as Karaage, Ebimayo, fried chicken cartilage, and croquette; grill dishes such as Agedashi Tofu, grilled Hokke fish, and Japanese style skewers; steamed dishes such as Shabu Shabu and Japanese Omelette; sushi and other rice dishes such as Chirashi, and beef bowl; Japanese style noodle dishes such as Ramen and Udon;
– Plan menus and determine size of food portions and presentation of food;
– Maintain inventory and records of food, supplies and equipment;
– Estimate food requirements and costs;
– Train new staff in preparation, cooking and handling of food;
– Supervise kitchen staff in preparation, cooking and handling of food;
– Clean and inspect kitchen and work areas.
